Salmon, Yummers

I wish I had some pictures of the feast I made last night. Josh got back from Seattle late Wednesday night. He revealed all his gifts on Thursday morning! The kids got UW gear and I got 5 lbs of glorious fresh King Salmon....YUM! Fresh from Pike Place market....I had anxiety all week about how to prepare it!

Stones came over yesterday. I made 3 lbs of it 3 different ways. I pan-seared it, poached it, and parchment paper steamed it with dill, lemon and dijon mustard. I made two sauces, a red wine reduction butter sauce and a mayonnaise, dill a lemon sauce. I also made pan roasted brussel sprouts and Mediterranean couscous. The meal was delish, and there is not much left today for lunch I'm afraid!
